10.26.11 NUFS 144 Full Course Meal Appetizer: Shrimp Ceviche (Thanks to a student in class for the recipe) Second, Squeeze the limes and lemons into the bowl with the shrimp. Let it sit for a couple minutes so that the acidity cooks the shrimp. The shrimp will start turning white when it starts to cook.
Main Dish: Beef Wellington and a side of Potatoes
Dessert:Lemon Supreme Pie and Cheesecake Stuffed Strawberries
Shrimp Ceviche:
2 large onions
4 tomatoes
1 pound of white shrimp
4-5 lemons
2-3 limes
cilantro
1 cucumber
chips
First, deshell and devein the shrimp. Cut the shrimp into pieces and put into a bowl.
Third, Cut the tomatoes and onion into small cube-like pieces. Also, cut the cilantro and cucumber
Once shrimp is cooked enough, mix it all together. Enjoy it with some chips or tostadas.
Beef Wellington:
Filet Mignon
Mushrooms
Onions
Puff Pastry
Take the Filet and remove the fat from the meat itself.
Next, cut the mushrooms and onions finely (if you have a food processor, now would be the time to use it). Saute the mushrooms and onions.
Spread out the puff pastry and spread the onion/ mushroom mix after it has finished being sauted. Lay the filet on the puff pastry and roll it up.
Put in the oven 400 degrees and cook for about half and hour… The meat should be done when the pastry.

Cheesecake Stuffed Strawberry:
Strawberries
Cream cheese
Vanilla extract
Powdered sugar
Graham cracker
Wash the strawberries and hollow the top of the strawberry out.
Mix the cream cheese with powdered sugar (to taste) and about a tablespoon of vanilla extract.
Stuff each strawberry with the cream cheese mix and top it off with crushed graham crackers.

Appetizer: Pigs in a Blanket

Ingredients: Hot links, Pillsbury croissant dough (premade)
Optional:cheeses
Easy recipe for instant gratification. Cut the hot links into preferred size and wrap the croissant dough around it. Add cheese before wrapping if you like. Put into the over (around 350 degrees) and bake until dough is risen and slightly browned.
Pinapple Fried Rice
Ingredients:
1 can of canned pineapples
4 cups of cooked rice
oil for stirfrying
Shallots
garlic
green chile (used jalapeño in this recipe)
cashews or peanuts (we used peanuts)
egg
frozen peas
raisins
3 tbsp chicken stock
3 tbsp fish sauce
2 tsps curry powder
1 tsp sugar
green onions
Chinese Sausage
(note: ingredients that does not list amount is simply to taste.)
First all, prepare ingredients by cutting them into small pieces and set aside.
Ready the chicken stock, fish sauce, curry and sugar and mix together in a small bowl. Fry the chinese sausage and cut into pieces and set aside.
In a large pan or wok, stir fry the shallots, green onion, pepper/chile, and garlic. Stify fry until somewhat cooked. Scoot the ingredients to one side ( or the outside) of the pan. On the vacant side of the pan, add eggs and mix. Eventually, mix all the ingredients together like making scrambled eggs.
The next step is to add the mixture of stock, fish sauce, curry powder, and sugar into the wok and let it simmer. Add the nuts and simmer for about a minute. Then add the rice. Mix well so flavor and color is uniform. Taste to see if it is good.
(Note: if flavor or ingredients is not enough, redo the previous steps)
Once the rice is mixed well, add frozen peas, raisins, and pineapple to the mixture. Lastly add the sausage and mix well..

Dried Pepper Powder
Sugar
Peanuts
Tofu
Green Onion
Tamarind
Sorry guys, no exact measurements here. purely to taste (although it is pretty easy to adjust flavoring. Add more lime/lemon if wanted for sour taste. Add more or less pepper powder for spice. etc).
Directions:
Firstly, prepare the rice noodles. Soak them in warm water for about 15 minutes.
Then prepare the other ingredients(Shallots, green onion, tofu, etc) by cutting them up.
In a wok, fry the shallots, green onions,peanuts, and tofu until browned.
Drain the rice noodles and add to the wok.
Then add the fish sauce, tamarind, chili powder and stir completely.
just like in the fried rice above, make room in the wok to scramble the eggs. Then gently fold the eggs into the rest of the noodles when it becomes cooked.
Lastly add the shrimp, chives, and sprouts. Leave on heat until the shrimp is cooked al dente. For us, we liked to put on the lemon/lime at the end so we can add more or less depending on our taste.

Turkey:
Buy a turkey and thaw it out a couple days before actual cooking. Either completely thaw it out in the fridge or in water.
The day before, brine the turkey for 8-16 hours.
The bring consists of 1 gallon of vegetable stock, candied ginger, salt, pepper, all pepper, black pepper corn, light brown sugar. Let the mixture boil and when mixed together nicely let it cool. Then add 1 gallon of water. Put the turkey in this mixture and let it sit for 8-16 hours.
To stuff the turkey, take an apple, half an onion, cinnamon stick and cut up. Put in a bowl of water and microwave for 5 minutes. Then stick the apple, onion, cinnamon, sage, and rosemary into the cavity.
After brining and ready to cook, preheat oven to 500 degrees. Cook the turkey for half an hour. After, set to 350 and put a foil overing over the turkey breast. cook for another 2 and a half hours. When done enjoy.
Jambalaya:
- 2 teaspoons olive oil
- 2 boneless skinless chicken breasts, cut into bite-size pieces
- 8 ounces kielbasa, diced
- 1 onion, diced
- 1 green bell pepper, diced
- 1/2 cup diced celery
- 2 tablespoons chopped garlic
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon onion powder
- salt and ground black pepper to taste
- 2 cups uncooked white rice
- 4 cups chicken stock
- 3 bay leaves
- 2 teaspoons Worcestershire sauce
- 1 teaspoon hot pepper sauce
- 1 can tomatoes
Directions
- Heat oil in a large pot over medium high heat. Saute chicken and kielbasa until lightly browned, about 5 minutes. Stir in onion, bell pepper, celery and garlic. Season with cayenne, onion powder, salt and pepper. Cook 5 minutes, or until onion is tender and translucent. Add rice, then stir in chicken stock and bay leaves. Bring to a boil, then reduce heat, cover, and simmer 20 minutes, or until rice is tender. Stir in the Worcestershire sauce and hot pepper sauce. Also add the canned tomatoes.
Lemon Supreme Pie
1 (9-inch) unbaked deep-dish pastry shell (see recipe)
Lemon Filling:
1 1/2 cups sugar
6 tablespoons cornstarch
1/2 teaspoon salt
1 1/4 cups water
2 tablespoons butter
2 teaspoons grated lemon peel
4 to 5 drops yellow food coloring (optional)
2/3 cup fresh lemon juice
Cream Cheese Filling:
2 packages (one 8-ounces and one 3-ounces) cream cheese, softened
3/4 cup powdered sugar
1 1/2 cups non-dairy whipped topping
1 tablespoon fresh lemon juice
Line unbaked and unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450*F (230*C) for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack.
In a saucepan, combine sugar, cornstarch and salt. Stir in water; bring to boil over medium-high heat. Reduce heat; cool and stir for 2 minutes or until thickened and bubbly. Remove from the heat; stir in butter, lemon peel and food coloring, if desired. Gently stir in lemon juice, careful not to over mix. cool to room temperature, about 1 hour.
In a mixing bowl, beat cream cheese and sugar until smooth. fold in whipped topping an lemon juice. Refrigerate 1/2 cup for garnish. Spread remaining cream cheese mixture into shell; top with lemon filling. Chill overnight. Place reserved cream cheese mixture in a pastry bag with a star tip and pipe stars onto pie. Store in refrigerator.
Makes 6 to 8 servings.

Imitation Crab
Ground Pepper
Emeril’s Original Essence
Garlic Powder
Wash the mushrooms and remove the stem. (stem can be used in another dish like the main dish here)
On this side, cut up the imitation crab, spam, onion, and green onion finely.
Set up a pot and start frying the onion. Then add the spam. Then the imitation crab and the green onion. Add the cream cheese to taste. Grind some black pepper and add the garlic powder and Emeril’s powder also to taste.
Use this mixture and stuff it into the mushroom and bake at 350 degrees its until the mushrooms look good.
Main Dish: Breaded Chicken Alfredo
Ingredients:Chicken
Bread Crumbs
Flour
Egg
Alfredo Sauce
Mushrooms (we used the stems from the stuffed mushrooms above)
Dried Tomato
Angel Hair pasta
For the chicken, boil before so it cooks slightly. Then bread it

Once breaded, bake until chicken is fully cooked.
For the Pasta, just cook the noodles, add the sauce and other ingredients. Put the chicken on the side, plate, and enjoy!

Cheese Zombie:
Ingredients:
2 tablespoons yeast
2 cups of warm water
4 cups of flour
1 1/2 teaspoons salt
1/4 cup sugar
1/4 cup butter
cheese
1 egg
Combine the 2 warm cups of water and 2 tablespoons of yeast (make sure the water is not too hot or else it will kill the yeast). Let the combination sit for a couple minutes. After, add the butter, sugar, and salt. Use a dough hook and mix in the flour one cup at a time.Mix until the dough does not stick.
Cut of a slab of the dough and flatten out into a circle like piece. Place the cheese inside and pinch the outside over the cheese so that it fully covers the cheese(make sure there are not holes or else the cheese will ooze out). Let the dough rise about double the original size. When risen, scramble one egg and brush the contents on top of each roll. Bake at 350 degrees until done.
Main Dish:
2 large tomatoes
2 large carrots
1 pound of string beans
1 pound of shrimp.
5-6 cloves of garlic
1/2 onion
patis (fish sauce)
water
Cut the tomatoes, carrots, onions, garlic, and string beans. In a pot, put in the garlic, onions. Add the tomatoes and simmer. Next comes the carrots. Then shrimp.
When almost cooked, add water (enough to make it soupy). Add the string beans and let it cook. Add patis to taste.
Strawberry Cake with Cream Cheese Frosting
Ingredients: Box of strawberry cupcake and cream cheese frosting
Follow the ingredients of the strawberry cake but put in cupcake mold.
Once fully baked, let it cool and add cream cheese frosting.

the other night we had a small cooking session. consisted of garlic fries & tri-tip with veggies. check out the pictures!
sorry, we don’t have the ingredient measurements & recipe instructions, but we kind of just made it up.
however, the ingredients did consist of garlic, potatoes, salt, parsley, butter, and oil for the garlic fries. tri-tip, steak seasoning, carrots, potatoes, garlic, onions, and butter for our tri-tip & veggies dish. hope you guys enjoy!

It’s been a while since any of the group has cooked anything. Or at least no three course meals at that.
As for the new things, i had an idea to document all the other events that we end up doing. We can post places we eat and rate what we eat as well; somewhat like a yelp. We can also document our bike rides and our destinations…Just a thought.

Garlic Bread:
Ingredients:toppings: Garlic, butter, parsley, cheese
Dough:See previous blog for ingredients and how to make.

First prepare the dough as said in the previous blog. Bake in a pan.
On the side, prepare parsley, butter and garlic. Cut the garlic and parsley and add to the butter. Mix well and wait until the dough is baked.
When done/almost done, spread over the bread and bake to get rid of most of the moisture and so it absorbs into the bread. When done, sprinkle cheese on top and serve.
Lady Finger Dessert:
Ingredients: Lady Fingers (36)
11 oz. cream cheese
1 cup sugar
1 teaspoon vanilla
1 pint cream whipped
1 can cherry pie filling
Split lady fingers lengthwise. Line bottom and sides of a 9 inch springform pan with lady fingers, cutting lady fingers to fit. Mix cheese, sugar, and vanilla. Fold ion whipped cream. Layer one half of mixture over lady fingers. Cover with whipped cream mixture. Top with cherry pie filling. Refrigerate overnight for several hours ( in this case a couple hours).
Optional toppings: strawberries with glaze or strawberries.
